Currently, in the absence of the Passover offering, after reciting the bracha of HaMotzi, one recites the bracha of al achilas matzah (that God commanded us regarding the eating of matzah). He then dips the matzah in charoses and eats it. [Dipping the matzah in charoses does not reflect our practice.] Next, one recites the bracha of al achilas maror (that God commanded us regarding the eating of maror). He then dips the maror in charoses and eats it. The maror should not be left in the charoses for too long out of concern that the bitter taste might be canceled out, and eating maror is a rabbinic mitzvah. Finally, one folds matzah and maror together, dips them in charoses, and eats them without reciting a bracha, in memory of the Temple.

After eating these things, the meal continues, in which participants eat and drink whatever they desire. At the end of the meal, one eats an olive-sized portion from the Passover offering, after which he doesn’t taste anything else. Nowadays, one eats an olive-sized portion of matzah and does not taste anything else afterwards so that the taste of the Passover offering, or of the matzah, will remain in his mouth because eating these things is a mitzvah.
