#284: The Condition of "Miyad" - When Separating Much Before is Part of the Process

1. Although we learned that borer may only be done “shortly” before the meal (miyad), many poskim explain that this means it may be done as far in advance as necessary for the food to taste good. For example, one may peel onions (an act that is likely subject to the restrictions of borer, as we will learn) so that they can cook within other foods to give them taste a few hours beforehand if needed (Shemirat Shabbat K'hilchatah ch.3, n.222).

2. Because ashkenazim cannot heat up liquids on shabbat, one may remove pieces of chicken or meat from a cold stew or liquid on Shabbat day (an act which is also subject to borer) before reheating them on a hotplate (in a permitted manner), even if it will take a long time to warm up (Orchot Shabbat 3:56).
