#255: Squeezing Vegetables
1. One may squeeze pickled or boiled vegetables in order to remove excess liquid inside if one does not use the liquid. However, one may not use or consume the extracted liquid (Shulchan Aruch, O.C. 320:7).
2. Based on this, it is permitted to squeeze out liquid absorbed inside lettuce, since one merely wishes to dry the lettuce (Mishnah Berurah 320:24). Along the same lines, one may squeeze cooked vegetables, oily food (such as potato kugel), or even a pickle, to dry it out, but not to consume the liquid that emerges (Orchot Shabbat 4:15, Yalkut Yosef Orach Chaim 320:12).
