Let’s say that someone makes a dough of wheat and rice flour combined. If it tastes like the wheat, challah must be taken; if not, then not. Even if he put yeast from wheat into a rice dough, one must take challah from it if it tastes like wheat. If it doesn’t, then challah need not be taken.
Hilchos Bikkurim 6:12
One must take challah from dough that was kneaded with wine, oil, honey, or boiling water; a dough made with spices in it; a dough made by putting flour into boiled water. Challah must be taken when dough is baked, regardless of whether it was done in an oven or in a pit, in a shallow or deep pan, and regardless of whether one first stuck the dough to the pan and then heated it or one heated the pan first and then stuck the dough to it. However, if someone made a dough to dry in the sun or to cook it in a pot, challah need not be taken. This is because dough cooked in the sun is not considered bread even if it was kneaded with water. Similarly, one need not take challah from roasted grain kneaded with water or honey that is eaten without baking. This is because the mitzvah of challah only applies to a dough that will be baked as bread for people.
