There are eight species of locusts permitted by the Torah. [Just as we didn’t give exhaustive lists of kosher animals or non-kosher birds, we’re not even going to try to identify the eight kosher species of locust.]

A person who is knowledgeable about these species and knows their names may eat them. A hunter’s word is accepted just as it is regarding a bird. One who isn’t familiar with the species must check a locust’s signs, of which there are three: a kosher species of locust has four legs, four wings that cover most of its body both in length and in width, and it has two longer legs that it uses to hop. Even if has a long head and a tail, if it’s called a locust, it’s kosher.
