785. Working the Dough Continuously
110:8 One must be careful not to leave the dough for even a moment without working it. As soon as one has finished the dough, he divides it into circles; one must therefore be careful not to make too large an amount of dough, just enough for the size of the circles. If the one dividing the dough has some left, he should continue kneading it and not let it rest even for a moment without working it.
110:9 The one rolling the dough must do so quickly. He may not delay in an effort to make the matzah a particular shape. (He may not even use a mold to cut out shapes even though this is not particularly time-consuming – Mishnah Brurah 460:14.) He must be careful to ensure that there aren't any particles of dough on the board, nor is any dough stuck on his hands. As soon as he sees that some dough is stuck on them, he must wash his hands thoroughly.
