From when may one eat fruit of a tree in the sabbatical year? When unripe fruit starts to turn red, one may eat them with bread in the field. When they start to ripen, one may bring them into the house. In other years of the sabbatical cycle, this is the time when produce becomes liable in tithes.

Sheviis 4:8

Once unripe grapes have produced juice, they may be eaten with bread in the field. When they have ripened, one may bring them into the house. This is the time when they become liable to tithes in other years of the sabbatical cycle.
