Carob becomes liable to tithes when dark spots appear. Everything black becomes liable when black spots appear. Pears, quince and crabapples become liable when they get smooth. Everything white becomes liable when it gets smooth. Fenugreek becomes liable when it is able to be replanted. Grain and olives become liable when they have reached one-third of their final growth.

Maasros 1:4

Cucumbers, gourds, melons, apples and esrogim are liable to tithes whether they are harvested when they are small or large. Rabbi Shimon does not require it of esrogim when they are harvested while still small. Bitter almonds are liable and sweet almonds are exempt when they are small; sweet almonds are liable and bitter almonds are exempt when they are large.
