Hilchos Shevuos 4:12

If a person took an oath not to eat eight of something, then he took an oath not to eat nine and an oath not to eat ten, he’s only liable once regardless of whether he eats eight, nine or ten of the item.

Hilchos Shevuos 4:13

If he takes an oath not to eat ten, followed by an oath not to eat nine, and an oath not to eat eight, then if he eats ten he’s liable for each oath individually, for a total of three times. Pursuant to this, if he eats nine, he’s liable twice, and if he eats eight, he’s liable once.
