A ram sacrifice was offered by 11 kohanim: five handled the flesh, two handled the entrails, two handled the flour and two handled the wine.

Yoma 2:7

A bull was offered by 24 kohanim: the head by one, the leg by two, the rump by two, the leg by two, the chest by one, the neck by three, the two front legs by two, the two flanks by two, the entrails by three, the flour by three and the wine by three. This was in the case of a communal offering. When it came to private sacrifices, the officiating kohein could do everything himself if he so desired. In both cases, the animal may be flayed and cut apart even by a non-kohein.
