Hilchos Shechita 4:3

Optimally, even a Jew who knows the laws of shechita shouldn’t slaughter in private until he has performed ritual slaughter in front of a scholar numerous times until he’s proficient and zealous. If he did slaughter privately, the slaughter is valid.

Hilchos Shechita 4:4

One who knows the laws of shechita and slaughters in front of a scholar until he’s proficient is considered an expert. Any expert may slaughter in private at the outset. Even proficient women and servants may slaughter at the outset.
