2,513. The Definition of "Stampeding"

Hilchos Shechita 3:10

Let’s say that the shochet stuck the knife under the animal’s skin and cut both signs in the regular way, concealed the knife under tangled wool, or spread a garment over the knife and the animal’s neck, slaughtering it underneath. In all of these cases, since the knife is not visible, there’s a doubt as to whether the animal is a neveila. Similarly, if one slaughtered smaller than half the signs with concealment but he finished slaughtering without concealment, there’s a doubt as to whether the animal is a neveila.

Hilchos Shechita 3:11

An example of “stampeding” is striking the neck with the knife as if it were a sword, cutting the signs at once without moving the knife back and forth. Another example is putting the knife on the neck and pressing down like one does when cutting radishes or gourds until he cuts the signs. If one does this, the slaughter is invalid.
