2,448. Roasting a Whole Animal

If a goat is roasted in its fat, one may not even eat from the tip of its ear. Since the fat spreads throughout the animal’s limbs, it enhances and imparts flavor. Therefore, when it comes to a lean goat that only has a small amount of fat on its kidneys and innards in the ratio of 1 out of 61, one may cut the meat and eat it until he comes to the fat. Similarly, if a thigh is roasted with the sciatic nerve, one may cut the meat and eat it until he reaches the nerve, which he must throw away. Also, if an animal was roasted whole without removing the various prohibited cords and membranes, one may cut the meat and eat it, disposing of the prohibited parts when he comes to them. One need not calculate the ratio of prohibited to permitted because these cords and membranes don’t impart taste.

One may not roast properly slaughtered kosher meat in the same oven as meat from a neveila or from a non-kosher species even if they don’t touch one another. If one did roast them together, the kosher meat remains permitted. This is so even if the prohibited meat was very fatty and the permitted meat was lean because aroma doesn’t render things prohibited; only a prohibited item itself can do that.
