Maachalos Assuros 7:17

We don’t salt or wash fat with meat; one may not use a knife that cut fat to cut meat, nor a vessel in which fat was washed to wash meat. For this reason, butchers must have three knives available: one to slaughter animals, one to cut meat and one to cut fat.

Maachalos Assuros 7:18

If the accepted local practice is for butchers to wash meat in their shops, they must have two vessels of water: one for washing meat and the other for washing fat.
