2,332. The Liquid From Roasting

Regarding an animal’s head roasted in an oven, if the head is hung with the neck hole facing downwards, it is permitted because the blood will flow out. If the neck hole is to the side, the brain may not be eaten because blood collects in it; the rest of the meat on the outside of the skull is permitted. Let’s say that one roasts the head with the nose pointing downward. If he puts a straw or a reed in the nose so that it stays open and the blood can flow out, the brain may be eaten; if not, it is prohibited.

We may not put a vessel under meat being roasted in order to collect the dripping liquid until no redness remains in the liquid. The way to collect fat is to put a little salt in a vessel and to leave the vessel until the meat roasts. One then removes the layer of fat from the top. The liquid under the fat is prohibited.
