Regarding blood spots in eggs, if it’s found on the white, one may remove the blood and eat the rest of the egg; if on the yolk, the whole egg is prohibited. A person of good character will eat unfertilized eggs.

Once a chick has been hatched, even if it hasn’t yet opened its eyes, it may be eaten. When a kosher animal is rendered non-kosher by an injury (a “treifah”), its milk is prohibited like the milk of an animal from a non-kosher species. Similarly, the egg of a kosher bird that became a treifah is like the egg of a non-kosher species of bird and is prohibited.
