2,944. Valuations Pledged by Non-Jews
Hilchos Arachin Vacharamin 1:6
One may commit the valuation of a non-Jew, but a valuation committed by a non-Jew is ineffective. For example, if a non-Jew pledges his own valuation or that of a certain Jew, his words have no impact. However, if a Jew commits the valuation of a present non-Jew or of some other non-Jew, then he must pay based on the age of the non-Jew whose valuation he committed. Similarly, if one commits the valuation of a person with congenital deafness or of a person lacking mental faculties, he must pay based on that person’s age.

One may commit to a valuation for a servant and a servant may commit to a valuation just like any other Jew. If he is redeemed from servitude and has the resources, he pays the commitment that he vowed.
