If someone put his olives on the roof to dry, even if they’re piled a cubit high (about 18”), they do not become susceptible to ritual impurity. If he put them in the house to wither – even if he intends to later put them on the roof – or if he put them on the roof to wither or to open, then they become susceptible to impurity. If he put them in the house until his roof could be improved or until he could bring the olives elsewhere, they remain insusceptible to impurity.

Tohoros 9:7

If he wanted to take from the olives enough for one or two pressings, Beis Shammai say that he may cut off what he needs using something ritually unclean but he must cover what remains only using something ritually clean; Beis Hillel say that he may also cover it using something ritually unclean. Rabbi Yosi says that he may dig out what he needs with metal axes and carry it to the press using something ritually unclean.
