So long as the necessary components of a sacrifice were offered by day, the rest could be offered all night. This means that if the blood of offerings was sprinkled by day, the fats may be offered on the altar fire by night until dawn. Similarly, the limbs of burnt offerings may be burned on the altar until dawn. In order to distance us from accidental violation of the law, the Sages decreed that the fats and limbs of burnt offerings must only be burned on the altar fire until midnight.

Even though the fats and limbs of offerings could be burned on the altar at night, they could not be intentionally delayed. Rather, one must attempt to offer everything by day, as it is preferable for a mitzvah be performed in its proper time. This priority is evident from the fact that even though burning the fats and the limbs of offerings was permitted at night, doing so on time overrides Shabbos and is not delayed until Saturday night.
