715. Kneading on Yom Tov
98:9 Kneading is permitted on yom tov but one may not measure the flour. Rather, he should just take what looks right. If his estimate is off, it is permitted to add or remove flour as necessary. 98:10 Cut-up pieces of dough that are cooked to eat with soup – i.e., noodles or farfel - should be kneaded before yom tov because they are improved by standing. If they weren't kneaded before yom tov, they may be kneaded on yom tov in an unusual manner, such as by kneading them on a cloth instead of on a board. Also, foods that will not be ruined, like dried fruits, should be cooked before yom tov.
